We encourage you to send us your maritime recipes to be featured on this page. We love to also hear the stories behind the recipes, so don't be shy! As we collect culinary masterpieces, they will be archived to their own recipe pages with links to them from this page.

 


Our first recipe is from Tom and June Reddy. It was written while surveying what two young boys can do to an otherwise tidy house.

Canary Bruchetta

When we were in the Canary Islands a few weeks ago, we visited an Italian restaurant, whose owners were a, real-Italian, brother-sister team. They served us food, but above all, a great version of Bruschetta:

  • Bread: Cut the bread or roll in half and then cut each piece down to a 1 - 2 inch piece.
  • Topping: Mix together -- garlic, chives, chopped basil, oregano, a few tomatoes and about 1/4 cup of olive oil. Cover tightly with Saran wrap, and let the flavors blend overnight in the fridge. Remove from the fridge about 1 hour before serving, in order to bring to room temperature.
  • As described above, lightly toast the bread or roll, place the topping on it, and then return it to the oven for a minute or so, just to "make it all happy", as Emeril would say.
  • Place each piece attractively on a plate and dust with freshly chopped basil or oregano.

Voila!!

Pasta and Clam Sauce

2 cans chopped clams

2 Tbs.olive oil

2 cloves garlic

½ cup chopped onion

6-8 mushrooms, sliced

1 tsp. oregano (dried)

Salt and pepper to taste

½ cup grated parmesan cheese

 2 Tbs. chopped parsley or cilantro (for garnish)

 

Saute garlic, onion and mushrooms in oil. Add clams with broth and seasonings (can be thickened with a little flour and water if desired). Heat through and serve over pasta. Top with parsley and parmesan. - Lee Duer

 


Boating Recipes from Mary Duffie

Hot Tuna Cheese Melt

1 can tuna
Chopped celery
Green olives
Sharp cheese
Mayonnaise
Hamburger Buns

Mix all ingredients (in amounts to your taste) together and put into buns. Wrap buns and bake until cheese melts.

Brunswick Stew

Creamed corn
Butter beans
Tomatoes
Chicken, pork or beef barbecue
Combine ingredients, heat and eat!

Chicken Rice-a-Roni

1 package Chicken Rice-a-Roni
1 can of chicken
1 can of cream of chicken soup
Combine ingredients, heat and eat!

Seafood Stuffing

1 pkg. dry stuffing mix
1 can of crab
1 can of shrimp
1 tsp. lemon juice
Mix ingredients and use to top fish fillets.

Chicken Chili

2 cans white beans

2 jars picante sauce

4 cups cubed chicken

 1-2 tsp. cumin

 

Simmer ingredients for 20 minutes. Top with melting cheese such as Monterrey Jack.  

Simple Taco Soup

2 lbs. ground beef

1 envelope taco seasoning

1 ½ cups water

1 can each: Chili beans, Corn, Pinto beans, Stewed tomatoes, Rotel tomatoes, and Green chilis

1 envelope Ranch dressing mix.

 

Mix, heat and eat!
